Filipino cuisine (Filipino: Lutuing Pilipino/Pagkaing Pilipino) is composed of the cuisines of 144 distinct ethno-linguistic groups found throughout the Philippine archipelago. However, a majority of mainstream Filipino dishes that compose Filipino cuisine are from the cuisines of the Ilocano, Pangasinan, Kapampangan, Tagalog, Bicolano, Visayan (Cebuano, Hiligaynon and Waray), Chavacano and Maranao ethno-linguistic groups.

 The style of cooking and the food associated with it have evolved over many centuries from their Austronesian origins (shared with Malaysian and Indonesian cuisines) to a mixed cuisine of Indian, Chinese, Spanish and American influences, in line with the major waves of influence that had enriched the cultures of the archipelago, as well as others adapted to indigenous ingredients and the local palate.

Dishes range from the very simple, like a meal of fried salted fish and rice, to fish curry, chicken curry, complex paellas and cozidos created for fiestas of Iberian origin. Popular dishes include: lechón (whole roasted pig), longganisa (Philippine sausage), tapa (cured beef), torta (omelette), adobo (chicken or pork braised in garlic, vinegar, oil and soy sauce, or cooked until dry), Various food scholars have noted that Filipino cuisine is multi-faceted and is the most representative in the culinary world for food where 'East meets West'.

Bistek Tagalog (beefsteak) Recipe

Ingredients
  • 1 lb. beef sirloin thinly sliced
  • 1/4 cup soy sauce
  • 1 piece lemon or 3 pieces calamansi
  • 1/2 tsp ground black pepper
  • 3 cloves garlic crushed
  • 1 large onion sliced into rings
  • 3 tbsp cooking oil
  • salt to taste

Instructions

  1. Marinate beef in soy sauce, lemon (or calamansi), and ground black pepper for at least 1 hour
  2. Heat the cooking oil in a pan then stir fry the onion rings until the texture becomes soft. Set aside
  3. In the same pan where the onions were fried, fry the marinated beef (without the marinade) until color turns brown. Set aside
  4. Put-in the garlic then saute for a few minutes
  5. Pour the marinade and bring to a boil.
  6. Put in the fried beef and simmer for 15 to 20 minutes or until meat is tender. Add water as needed.
  7. Add the stir-fried onions and some salt to taste.
  8. Serve hot. Share and Enjoy!
