GHANA
Ghanaian cuisine is the cuisine of the Ghanaian people. Ghanaian main dishes are organized around a starchy staple food, with which goes a sauce or soup containing a protein sauce. The main ingredient for the vast majority of soups and stews are tomatoes- canned or fresh tomatoes can be used. As a result, nearly all Ghanaian soups and stews are red or orange in appearance.
Kentumere
Ingredients
Half a cup of palm oil or other vegetable oil
750 gr. chicken, cut into very small pieces.
½ kg. smoked, dried fish
Several cups of spinach or similar greens (turnip leaves or cabbage)
1 or 2 chopped onions
2 to 6 ripe tomatoes, peeled and diced
1 cube JUMBO Chicken
1 cup egusi seeds
1 tsp. fresh or ground nutmeg
Several okra
1 cup fresh prawns or langoustines
½ cup cooked ham, diced
How to prepare Kentumere
Step 1
Wash and chop the spinach leaves. Soak the dried fish for an hour and then chop finely, removing any bones and skin. Heat the oil in a pan. Fry the chicken until partly cooked and add a few cups of water. Stir and cook over a low heat for several minutes.
Step 2
Add the fish and the JUMBO Chicken cube together with the onion and the tomatoes. Cover the pan and leave to cook over a low heat. When the vegetables are cooked, add the remaining ingredients. Cook over a low heat, stirring frequently (do not add any more water) until it has thickened slightly. Serve with rice or Fufu (yam mash). When the vegetables are cooked, add the remaining ingredients.
