Keto Vegetable Samosas

Low-Carb Indian Vegetable Samosas Recipe - Simply So Healthy

Delicious, healthy, home-made samosas to accompany an Indian-style dinner, or to enjoy as a lunch option, or side, or savoury snack.

Ingredients

Pastry

  • 220 g mozzarella cheese dry block - shredded
  • 30 g coconut flour 
  • ⅛ tsp fine himalayan pink salt 

Filling

  • 40 g carrot net weight - diced to 1cm cubes
  • 150 g swede net weight - diced to 1cm cubes
  • 50 g frozen peas
  • 15 g extra virgin olive oil 
  • 2 garlic cloves minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ¼ tsp turmeric
  • ½ tsp fine himalayan pink salt
  • ⅛ tsp ground white pepper
  • ⅛ tsp chilli powder
  • 100 g water
  • ½ vegetable stock cube 

Instructions

  1. pan-fry swede, garlic, spices and seasonings with extra virgin olive oil for 2-3 mins.
  2. add water and crumbed stock cube, stir, cover, and simmer for 10 mins.
  3. add carrot and peas, stir, cover and cook for another 15 mins.
  4. set aside, lid on, to cool.
  5. put dough ingredients in a bowl and heat in the microwave for 60 seconds on high setting.
  6. repeat in shorter blasts until melted, then knead it to form a dough.
  7. pre-heat oven to 180°C static.
  8. take ¼ dough (adjust if you changed servings default) and roll it out thinly to obtain two 24cm x 8cm (9.5" x 3") rectangles; fold one strip and fill the cone with ±30g vegetable mix; seal the top and any loose sides with egg wash- see Tips and Tricks in post.
  9. repeat until you've created 8 samosas.
  10. place samosas onto an oven rack lined with non-stick parchment paper, brush egg wash all over and bake for 12-15 minutes, or until they become golden brown.
