AMAZING SANDWICHES

 Hello ladies and gents this is the Viking telling you that today we are talking about

'PLUCK A DUCK!' WHAT A GREAT SANDWICH

Ingredients

  • 2 duck legs
  • 4 tbsp goose fat
  • 1 handful rocket leaves
  • 2 cloves garlic
  • 2 sprigs thyme
  • 1 brioche bun
  • 1 tbsp caramelised red onion chutney
  • 1 pinch salt & pepper
  • 1 tbsp Dijon mustard
  • 2 slices smoked applewood cheese


STEPS

Step 1 CONFIT THE DUCK

Rub garlic, thyme, salt and pepper over the duck legs. Put in a large bowl and cover in clingfilm and put in the fridge for (minimum) 3 hours


Step 2 COOK THE DUCK

After 3 hours, wash the duck legs, place on a baking tray and cover in goose fat. Place silver foil loosely over the duck and cook in the centre of a preheated oven for 3.5 hours on gas mark 1 - 135 °Celsius (275 °Fahrenheit)


Step 3 FRY THE COOKED DUCK

Dry fry the duck in a pan on a medium heat for 3 - 4 minutes adding slices of the cheddar to melt on top.


Step 4 TOAST THE BUN

Toast the burger bun for 2 minutes face down in the pan.


Step 5 SERVE UP!

Assemble the sandwich with the duck, cheddar, chutney, mustard and rocket.
