Indian Inspired Butter Lentils

Instructions
- Melt the vegan butter in a large pan. Add onions, ginger, turmeric, garam masala, salt, paprika, and cayenne pepper. Sautee for 2-3 min until fragrant and the onions are soft and translucent.
- Add garlic and saute for 2 min.
- Then add canned tomatoes, tomato paste, and coconut cream. Mix thoroughly and reduce liquid until thickened about 10-15 minutes.
- Add lentils and chopped cilantro. Garnish with almonds and some more cilantro.
Advanced Preparation
1 - 3 days prior [optional], Red lentils, raw 2 cup
Instructions:
- Cook your lentils in vegetable broth according to package instructions.
