Hello ladies and gents this is the Viking telling you that today we are talking about
GRENADIAN CRAB BACKS
- 6 – 8 Crabs (Wash, boil and pick off meat) Save backs
- 1 large onion (finely diced)
- 2 blades chive (finely chopped)
- 2 sprigs thyme (finely chopped)
- 3 tbs margarine
- 2 cloves garlic (grated)
- 1½ cups bread crumbs
- Salt and pepper
Method
- Melt 2 tbs. margarine in pot and add seasonings. Fry slightly. Add crab meat and 1 cup bread crumbs. Mix well and allow to fry for 10 – 15 minutes, stirring occasionally. Add salt and pepper to taste.
- Fill crab backs with the mixture. Sprinkle the tops with remaining bread crumbs and add pats of margarine. Place in oven and bake for 15 – 20 minutes. Serve hot or cold.
