 Hello ladies and gents this is the Viking telling you that today we are talking about 

GRENADIAN CRAB BACKS




  • 6 – 8 Crabs (Wash, boil and pick off meat) Save backs
  • 1 large onion (finely diced)
  • 2 blades chive (finely chopped)
  • 2 sprigs thyme (finely chopped)
  • 3 tbs margarine
  • 2 cloves garlic (grated)
  • 1½ cups bread crumbs
  • Salt and pepper


Method


  1. Melt 2 tbs. margarine in pot and add seasonings. Fry slightly. Add crab meat and 1 cup bread crumbs. Mix well and allow to fry for 10 – 15 minutes, stirring occasionally. Add salt and pepper to taste.
  2. Fill crab backs with the mixture. Sprinkle the tops with remaining bread crumbs and add pats of margarine. Place in oven and bake for 15 – 20 minutes. Serve hot or cold.
