Is there anything more satisfying than a loaded tray of nachos, still hot from the oven? They are the PERFECT weekend treat and they couldn't be any easier to make! This recipe is foolproof and sure to be delicious, but feel free to mix and match with your favourite ingredients. More questions? What are some toppings for nachos?

We've got a pretty impressive amount of toppings in this recipe! If you're looking for more options, try some of these: guacamole, pico de gallo, shredded lettuce, grilled sweetcorn, pinto beans, black olives, fresh jalapeño slices, pickled red onions, cubed steak, shredded chicken, or crumbled tofu.

Are nachos fried or baked?

Nachos are baked, but the corn chips used in them are usually fried. 

Do you put salsa on nachos before cooking?

We wouldn't recommend it! Any ingredients you want to retain freshness and crunch should be added after the nachos go into the oven. We're talking herbs, greens, tomatoes, fresh salsas, avocado, and guacamole—none of these things are good warm.

What kind of cheese is used with nachos?

We're big fans of cheddar, but your options are limitless. Just make sure it melts!

INGREDIENTS

FOR THE NACHOS

  • 1 tbsp. extra-virgin olive oil
  • 1 large onion, chopped
  • 450 g beef mince
  • 2 garlic cloves, crushed
  • 1 tbsp. taco seasoning
  • Salt
  • 400 g refried beans
  • 60 ml water
  • 1 large bag tortilla chips
  • 400 g grated cheddar
  • 50 g pickled jalapeños
  • 1 (400) can black beans, drained

FOR TOPPING

  • 1 avocado, diced
  • 1 large tomato, diced
  • 25 g spring onions, thinly sliced 
  • 15 g fresh coriander leaves (optional)
  • Sour cream, for drizzling
  • Hot sauce, for drizzling

 

DIRECTIONS

  1. Preheat oven to 220ºC (200ºC fan) and line a large baking tray with foil. In a large pan over medium heat, heat oil. Add onion and cook until soft, 5 minutes, then add beef and cook until no longer pink, 6 minutes more. Drain fat.
  2. Add garlic and taco seasoning and season with salt. Cook until meat is well browned and slightly crispy, 5 minutes more. Add refried beans and water to pan and stir until combined. 
  3. Add half the tortilla chips and top with beef-bean mixture, half the cheese, half the black beans, and half the pickled jalapeños. Repeat one more layer.
  4. Bake until cheese is melty, 15 minutes.
  5. Scatter with tomato, avocado, and spring onions. Drizzle with sour cream and hot sauce and devour.
