Com Tam (Vietnamese Broken Rice)
Com Tam is also known as Vietnamese broken rice which is usually served along with grilled meats, egg meatloaf, salad and pickles. Broken rice is actually broken grains of rice left over from the traditional drying and milling process. This used to be eaten by poor farmers as the price is significant cheaper than Jasmine rice. Com Tam has became a popular street food in Saigon.

INGREDIENTS
Pork Chops (Suon)
- 4 pieces Pork Chops or 4 chicken pieces
- 2 tbsp Vegetable Oil
- 4 cloves Garlic Minced
- 2 stalk Lemongrass Minced
- 2 tbsp Soy Sauce
- 2 tbsp Sugar
- 2 tbsp Fish Sauce
- 1/4 tsp Black Pepper
- 2 qty Carrots Julienne
- 1 qty Daikon small, Julienne
- 1/4 cup Sugar
- 1 tbsp Salt
- 1 cup Warm Water
- 1/2 cup Rice Vinegar
Dressing (Nuoc Cham)
- 6 tbsp Calamansi Lime Juice to taste
- 3 tbsp Fish Sauce
- 1/4 cup Sugar
- 3 cloves Garlic minced
- 1 qty Red Chilli chopped
- 1/2 cup Warm Water
Others
- 1 qty Fried Egg
- 1 qty Cucumber Sliced
- 2 each Tomatoes Sliced
- 4 cups Cooked Rice
INSTRUCTIONS
Pork Chops:
- Mix all the ingredients of the marinade together.
- Trim the pork chops, then marinade the pork chops for as long as possible.
- On a hot fry pan, sear and cook the pork chop until cooked.
Pickled Vegetables:
- Julienne (matchstick cut) the carrots and daikon to even sizes.
- Mix the warm water with sugar and salt - making sure that it completely dissovles. Then add the rice vinegar.
- Add you vegetables to the mix and let it sit and pickle at room temperature.
Dressing:
- In a mixing bowl, add the warm water, then garlic then sugar and make sure that the sugar is completely dissolved.
- Add the remaining ingredients: lime juice, fish sauce and chilli to complete it.
Others:
- Fry a sunny side up egg
- For each portion, plate up with: Rice, sliced cucumber and tomatoes, fried egg, pork chops and pickled vegetables.
