 Hello ladies and gents this is the Viking telling you that today we are talking about 

Korean beef lettuce wraps


prep time: 10 MINUTES cook time: 20 MINUTES total time: 30 MINUTES

A healthy Asian inspired lettuce wrap that the whole family will love.


Ingredients

  • 1 ½ lb Ground beef
  • ½ tbsp Sesame oil
  • ½ Onion chopped
  • ¼ c. Coconut animos or soy sauce
  • 2 tbsp Swerve brown sugar substitute
  • 1 tsp Chili garlic sauce
  • ½ tsp Ginger paste
  • 2 tsp Minced garlic
  • ¼ c Chopped cashews
  • Green Leaf lettuce leaves
  • Salt and pepper to taste
  • Chopped green onions for garnish, optional

Instructions

  1. Heat up ½ tbsp of sesame oil in a skillet over medium-high heat.
  2. Add the chopped onion to the heated skillet, and cook until softened and starting to brown.
  3. Mix in the ground beef, and cook until the beef is completely browned.
  4. Stir in the soy sauce, Swerve brown sugar substitute, chili garlic sauce, ginger paste, and minced garlic. Stir to combine well.
  5. Continue to cook down the mixture, lowering the heat to medium until most of the liquid has been absorbed.
  6. Mix in the chopped cashews, and remove the skillet from the heat.
  7. Let the mixture cool for a few minutes, and then add spoonfuls of the beef mixture to the green leaf lettuce cups, and top with freshly chopped green onions before serving.
