Hello ladies and gents this is the Viking telling you that today we are talking about
Ultimate Christmas leftovers sandwich
We look forward to the leftovers of a Christmas dinner just as much as the meal itself, and while we certainly wouldn't say no to a leftover turkey curry or pie, sometimes it's the simple things that shine the brightest. Use this basic sandwich recipe as a blueprint for your own Boxing Day lunch, incorporating everything that hasn't been snapped up by the family already to create an epic feast on the 26th.
Ingredients
- 2 slices of brown bread
- butter, optional
- 4 slices of leftover turkey meat
- 3 tbsp of red cabbage, cooked or leftover
- 3 slices of leftover stuffing, we used pork and chestnut
- 2 tbsp of cranberry sauce
- 1 handful of spinach leaves
- 2 tbsp of mayonnaise, mixed with any leftover turkey roasting juices or gravy
Method
1.Preheat an oven to 160°C/gas mark 3. Place the turkey and stuffing on a tray, cover with foil and heat in the oven until piping hot throughout (about 20-30 minutes). Meanwhile, gently reheat the red cabbage in a small pan
2.If you have any leftover turkey roasting juices or gravy, place a spoonful in a bowl and whisk in the mayonnaise. Season with salt and pepper
3. Butter the bread, then start layering up the sandwich. On the base, spoon on the red cabbage. Layer up the slices of stuffing and turkey
4. Spread the cranberry sauce over the turkey and top with spinach or salad leaves of your choice
5.Spread the top layer of bread with the turkey mayonnaise and place the lid on the sandwich
