Hello ladies and gents this is the Viking telling you that today we are talking about
Grilled rib-eye with blue cheese sauce
INGREDIENTS
- 4 x 180g each rib-eye steaks
- 2 teaspoons olive oil
- Parsley roast potatoes, to serve
BLUE CHEESE SAUCE
- 200g blue cheese (such as Stilton or gorgonzola)
- 1/3 cup (80g) sour cream
- 1 tablespoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon paprika
- Good pinch of ground cayenne pepper
METHOD
1.Place 150g of the blue cheese with the other sauce ingredients in the bowl of a food processor, season with sea salt and pepper, and whiz to combine. (Or mash and then beat with a wooden spoon until smooth.)
2.Brush the steaks with olive oil. Heat a frypan over high heat and pan-sear the steaks on one side for 2-3 minutes until well-browned. Turn once and cook briefly for a further 1 minute on the other side, for a medium-rare result.
3.Set aside to rest for 1 minute and season well with sea salt and pepper. Place the steaks on 4 serving plates, spoon sauce over the top and crumble over remaining cheese. Serve with parsley potatoes
