Smoked Salmon and Tomato Tartines
A more gourmet take on cream cheese and lox, these tartines include crumbled goat cheese and slices of fresh tomatoes.
Ingredients
- 1/4 c. red wine vinegar
- 2 tsp. sugar
- salt
- 2 shallots
- 4 oz. cream cheese
- 4 slice pumpernickel bread
- 3 plum tomatoes
- 8 oz. smoked salmon
- 1 oz. goat cheese
- 1/2 c. watercress
Directions
Step 1
In small microwave-safe bowl, stir together vinegar, sugar, 2 tablespoons water, and pinch of salt. Add shallots, stirring to combine. Microwave on high 2 to 3 minutes or until shallots are crisp-tender. Drain and let cool.
Step 2
Spread cream cheese on each slice of bread. Top with tomatoes. Divide salmon, then shallots, among bread slices. Top with goat cheese and watercress.
