 Hello ladies and gents this is the Viking telling you that today we are talking about 

Chocolate Apple Pie


Ingredients

Filling

  • 4 medium empire apples, peeled and sliced
  • 4 medium macintosh apples, peeled and sliced
  • 1/4 tsp ground cinnamon
  • 1/2 cup brown sugar
  • 4 tbsp corn starch
  • 1/2 tsp salt
  • 130g 70% dark chocolate, chopped

Pie crust

  • 3 cups (384g) all-purpose flour
  • 275g cold butter, cut in cubes
  • 1 tsp brown sugar
  • 1 tsp salt
  • 12-14 tbsp cold milk

Instructions

  1. Combine flours, sugar and salt in a large bowl, whisk until combine.
  2. Add butter and use a pastry blender to mix the butter and flour mixture until it appears in large pea size of butter. (If the butter starts to get soft, put it in the freezer for 15 mins.)
  3. Add cold milk, 1 tbsp at a time and use your hand to work the dough (you have to be quick before the butter starts to soften). Remember not to add too much milk, only add enough until dough holds together.
  4. Shape into a ball and divide into two. Flatten into a disk and wrap in plastic wrap. Refrigerate at least an hour.
  5. Mix apples, sugar, salt and cornstarch in a bowl to combine.
  6. Preheat oven to 425F.
  7. Take the one disk from the fridge and place on a well floured surface. Dust the rolling pin with flour and roll the disk into a 13 inch circle.
  8. Gently place the dough into the pie dish, making sure it's centered. Trim the edges, leaving an extra 1 inch on the outside. Place the pie dish in the fridge until the lattice strips are ready.
  9. Remove the second disk from the fridge. Place on a well floured surface. Dust the rolling pin with flour and roll the disk into a 11 inch circle. Use a cutting knife to cut the dough in strips of your preferred width.
  10. Take the pie dish out of the fridge. Pour half of the filling into the dish, add chocolate chunks, add the rest of the apples on top. Place half of the strips on top of the filling, leaving space between them and with the longest strip in the center.
  11. Fold back every other strip onto itself in a way that the folded edges are aligned at the center. Place a strip perpendicular to the folded edges. Unfold onto the perpendicular strip. Repeat, working your way to the sides until the pie is covered. It sounds complicated but it's not, practice with paper if you're not sure.
  12. Trim the strips flush with the bottom crust. Fold back the extra inch toward the center and seal with with your hands or a fork.
  13. Beat the egg yolk with the water. Brush the top. Sprinkle with 2 tbsp granulated sugar.
  14. Place the pie in the oven and immediately turn the temperature down to 350F. Bake for 50 minutes to an hour until crush is golden and filling bubbling. Check the crust periodically to make sure it's not browning too much. If it's the case, cover the crust with foil.
  15. When it's done, place a on cooling rack and serve warm.
