Kuwait
Kuwaiti cuisine is an infusion of Arabian, Persian, Indian, and Mediterranean cuisines. A prominent dish in Kuwaiti cuisine is machboos, a rice-based specialty usually prepared with basmati rice seasoned with spices, and chicken or mutton (pork is highly restricted due to religious reasons).
Seafood is a very significant part of the Kuwaiti diet, especially fish Local favorites are hamour (grouper), which is typically served grilled, fried, or with biryani rice because of its texture and taste, Zbaidi, safi (rabbitfish), and sobaity (bream).
Kuwait's traditional flatbread is called Iranian khubz. It is a large flatbread baked in a special oven and they often top it with sesame seeds. Numerous local bakeries dot the country, the bakers are mainly Iranians (hence the name of the bread Iranian khubuz). Bread is often served with mahyawa fish sauce. There are many other available cuisines due to the international workforce in Kuwait.
KUWAIT MURABYAN (RICE AND SHRIMP DISH)
INGREDIENTS
- ½ Tablespoon olive oil
- ½ large onion, thinly sliced lengthwise
- 1 clove garlic mashed together with:
- 1 teaspoon coriander, and
- ½ Tablespoon fresh ginger, grated
- 1 1b peeled and deveined shrimp
- ¼ teaspoon black pepper
- 1 large tomato, cut into thick slices
- 2 teaspoons kosher salt
- 2 cups water
- 2 cups basmati rice
For the topping:
- ⅛ cup Olive oil
- 1 yellow onion, thinly sliced lengthwise
- ¼ teaspoon cardamom
- ¼ teaspoon black pepper
- ¼ teaspoon grated loomi (Dried Black Lime)
- ½ teaspoon curry powder
- ½ teaspoon ground turmeric
- ¼ teaspoon ground cloves
- ¼ cup fresh cilantro, chopped
- 1 clove garlic mashed with:
- ½ teaspoon coriander
- ¼ teaspoon black pepper
- 1 1lb peeled and deveined shrimp
INSTRUCTIONS
- Heat the oil over medium heat.
- Add sliced onions and saute until golden brown.
- Add in the garlic, spice mixture and pepper.
- Add in 1 1lb of shrimp and tomato slices
- Cook for 10 minutes over medium heat
- Add in the water and salt and bring to a boil.
- Add in the rice (rinsed and drained) and stir to mix all together
- Reduce heat and simmer until the water is absorbed.
- You can make the topping while the rice is cooking when done remove from heat and set aside.
- To make the topping:
- Saute the onions in olive oil until golden brown
- Add the spices, chopped cilantro, grated loomi and mashed garlic mixture and stir together.
- Add in the remaining shrimp and saute until cooked through.
- On a platter put the rice mixture and then spoon the topping on top.
- Enjoy!
